Healthy Smash Cake Recipe

Ingredients:

  • 1 cup white whole wheat flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 medium ripe banana, about 3 ounces
  • 1/3 cup unsweetened applesauce
  • ¼ cup whole milk
  • ¼ cup pure maple syrup
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Whipped Cream Frosting:

  • 1 cup heavy whipping cream
  • Optional: 1 cup frozen blueberries + ¼ cup water for natural purple coloring

Instructions:

  1. Preheat your oven to 350°F. Butter and flour two mini 4-inch cake pans or line a muffin tin to make cupcakes.
  2. In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt. Set aside.
