22 Easy Crockpot Freezer Meals For Busy Family Nights

No Pinterest board full of recipes you’ll never make. Just true freezer-to-crockpot meals, fifteen of them ours, seven borrowed from bloggers we trust, all built the same simple way: bag it, freeze it, thaw it, dump it.

There’s a specific kind of exhaustion that hits around 4:45pm on a Tuesday when you open the fridge, stare into it for a solid 20 seconds, and close it again having learned nothing.

Last winter my freezer died at 2am and I woke up to a puddle of thawed chicken juice creeping across the kitchen floor. I stood there mopping in my pajamas while my five year old asked why mommy was crying over “just chicken.”

That chicken wasn’t just chicken. That was six weeks of dinners I’d spent an entire Saturday prepping, gone in one bad compressor.

So yes, I have strong feelings about freezer meals now, and also about buying a backup freezer thermometer, which nobody tells you that you need until it’s too late.

Once I got a new freezer (with a warranty this time), I got back into prep days, and I mean real freezer-to-crockpot meals, the kind where you dump raw ingredients in a bag, freeze it, and thaw it the night before.

Not “this happens to freeze well after you’ve already cooked it,” which is a completely different thing and honestly kind of a bait and switch when a recipe claims to be a freezer meal and isn’t.

Below are 22 that are the real deal. The first 15 are our own, built and tested in our own kitchen. The last 7 are from bloggers whose freezer-bag instructions we actually verified, and who link straight to a real recipe page instead of burying you in another roundup post.

Worth knowing before you start: Every recipe below goes into the freezer bag raw and uncooked, except where noted. Ground beef and sausage are the exceptions, brown and cool them first, raw ground meat turns grey and mushy once it’s thawed straight into a crockpot. Anything with dairy, coconut milk, pasta, or fresh greens gets added fresh on cook day instead of frozen in, I’ve flagged those too.

1. Honey Mustard Chicken Thighs

Sweet, tangy, and about as hard to mess up as a dinner gets.

You’ll need: 2 lbs boneless chicken thighs, 1/3 cup honey, 3 tablespoons dijon mustard, 1/2 cup chicken broth, 3 cloves garlic (minced), 1 teaspoon dried thyme, salt and pepper to taste

Whisk the honey, mustard, broth, garlic, and thyme together right in the freezer bag, then add the chicken and season with salt and pepper. Seal, squish to coat, and lay flat in the freezer. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 5 to 6 hours or high for 3 to 4. Shred it in the sauce or leave it whole, both are good. Serve over rice or mashed potatoes with the sauce spooned over top.

2. Mississippi-Style Pot Roast

This is the one that makes the whole house smell like you tried way harder than you did.

You’ll need: 1 chuck roast (3 lbs), 4 tablespoons butter, 1 packet ranch seasoning mix, 1 packet au jus gravy mix, 5-6 pepperoncini peppers plus 2 tablespoons of the jar juice, salt and pepper

Pat the roast dry, season with salt and pepper, and sear it in a hot skillet for about 3 minutes per side if you have the extra 5 minutes, it makes a real difference but isn’t required. Let it cool slightly, then place it in a freezer bag with the butter, both seasoning packets, and the pepperoncini plus juice. Seal, lay flat, and freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 8 hours, until it shreds with a fork. Serve over mashed potatoes with a green vegetable on the side and don’t skip the french fried onions on top if you have them.

3. Sweet & Smoky Pulled BBQ Chicken

The one I always double, because leftovers disappear fast.

You’ll need: 2 lbs boneless chicken breasts, 1 1/2 cups bbq sauce, 2 tablespoons apple cider vinegar, 2 tablespoons brown sugar, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder

Combine everything in a freezer bag, seal, squish to coat the chicken, and lay flat to freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 6 to 8 hours or high for 3 to 4, then shred right in the sauce. Pile it onto hawaiian rolls or into a baked potato, or serve it over rice for a lower carb night.

4. Black Bean & Sweet Potato Chili

Vegetarian and nobody at the table will notice, which is really the whole test for a good veggie swap.

You’ll need: 2 cans black beans (drained), 1 medium sweet potato (peeled and cubed), 1 can corn (drained), 1 can diced tomatoes, 1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon salt

Combine everything in a freezer bag, seal, and lay flat to freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 6 to 7 hours, until the sweet potato is fork tender. Mash a few of the sweet potato chunks into the chili to thicken it up if you like it heartier. Serve with cornbread or a scoop of rice, and shredded cheese on top if you’re not keeping it dairy free.

5. Slow Cooker Meatball Marinara

The one that barely counts as a recipe, and I mean that as a compliment.

You’ll need: 1.5 lbs frozen fully-cooked meatballs, 1 jar (24 oz) marinara sauce, 1 teaspoon italian seasoning, a small parmesan rind if you have one lying around

Combine everything in a freezer bag, seal, and lay flat to freeze. Because the meatballs are already fully cooked, this one’s forgiving, thaw it overnight if you can, but if you forget, an extra hour or two on low will still get you there. Dump into the crockpot and cook on low for 6 to 7 hours. Serve over spaghetti with garlic bread and a side salad, or pile it into hoagie rolls with mozzarella for meatball subs.

6. Loaded Vegetable Beef Soup

The soup I make when everyone’s a little under the weather and needs something that feels like it’s doing something.

You’ll need: 1 lb ground beef (browned and cooled), 1 bag frozen mixed vegetables, 1 can diced tomatoes, 1 small onion (diced), 2 teaspoons dried thyme, 1 bay leaf, salt and pepper, 4 cups beef broth (added fresh on cook day)

Brown the ground beef fully and let it cool completely, this is the one non-negotiable step. Combine the cooled beef, frozen veggies, tomatoes, onion, thyme, bay leaf, salt, and pepper in a freezer bag, seal, and lay flat to freeze, holding the broth back for cook day. Thaw overnight in the fridge. Dump into the crockpot, add the beef broth, and cook on low for 6 hours. Remove the bay leaf before serving. Good with a side of crusty bread or cornbread.

7. Tuscan White Bean & Chicken Soup

This one tastes fancier than the effort it actually takes, which is my favorite kind of recipe.

You’ll need: 1.5 lbs boneless chicken thighs, 2 cans cannellini beans (drained), 1 can diced tomatoes, 1 small onion (diced), 2 teaspoons italian seasoning, 1/2 teaspoon garlic powder, salt and pepper, 4 cups chicken broth (added fresh on cook day), 2 handfuls fresh spinach (added fresh on cook day)

Combine the chicken, beans, tomatoes, onion, italian seasoning, garlic powder, salt, and pepper in a freezer bag, seal, and lay flat to freeze, holding the broth and spinach back for cook day. Thaw overnight in the fridge. Dump into the crockpot, add the broth, and cook on low for 6 hours. Shred the chicken right in the pot, then stir in the spinach in the last 15 minutes. A little grated parmesan on top never hurts.

8. Brown Sugar Garlic Pork Chops

Sweet, garlicky, and done fast enough for a weeknight when the crockpot recipes above feel like too much of a wait.

You’ll need: 4 bone-in pork chops, 1/3 cup brown sugar, 1/4 cup soy sauce, 3 cloves garlic (minced), 1 tablespoon apple cider vinegar

Combine the brown sugar, soy sauce, garlic, and vinegar in a freezer bag, add the pork chops, seal, and squish to coat. Lay flat and freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 3 to 4 hours, watching it toward the end so the chops don’t dry out, pork chops are leaner than a roast and don’t do well left in all day. Serve with rice and the sauce spooned over top.

9. Coconut Curry Chickpea Stew

Vegetarian, dairy free, and genuinely one of the best smelling things to come out of a crockpot.

You’ll need: 2 cans chickpeas (drained), 1 can diced tomatoes, 1 medium sweet potato (cubed), 2 teaspoons curry powder, 1 teaspoon fresh grated ginger (or 1/2 teaspoon ground), salt to taste, 1 can coconut milk (added fresh on cook day)

Combine the chickpeas, tomatoes, sweet potato, curry powder, ginger, and salt in a freezer bag, seal, and lay flat to freeze, holding the coconut milk back for cook day. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 6 to 7 hours, until the sweet potato is tender. Stir in the coconut milk during the last 30 minutes. Serve over rice with fresh cilantro if you have it.

10. Sausage, Pepper & Tortellini Soup

The one that tricks everyone into thinking you did way more than dump a bag into a pot.

You’ll need: 1 lb italian sausage (raw, casings removed), 1 bell pepper (sliced), 1 small onion (diced), 1 can diced tomatoes, 1 teaspoon italian seasoning, 4 cups chicken broth (added fresh on cook day), 1 bag cheese tortellini (added fresh on cook day)

Combine the sausage, pepper, onion, tomatoes, and italian seasoning in a freezer bag, seal, and lay flat to freeze, holding the broth and tortellini back for cook day. Thaw overnight in the fridge. Dump into the crockpot, add the broth, and cook on low for 6 to 7 hours, breaking up the sausage as it cooks. Stir in the tortellini during the last 20 to 30 minutes, just until tender. A little parmesan on top is never a bad call.

Real talk: I browned the ground beef for the vegetable soup exactly once without letting it cool first and ended up with a bag of hot mush that fused to itself in the freezer. Let it cool all the way, spread it on a plate if you’re impatient like me.

11. Ginger Peach Chicken

Sweet, a little tangy, and unexpected enough that people always ask what’s in it.

You’ll need: 2 lbs boneless chicken thighs, 1 bag (12 oz) frozen peach slices, 1 small red onion (sliced), 2 tablespoons brown sugar, 2 tablespoons soy sauce, 1 tablespoon fresh grated ginger, 1 teaspoon ground coriander

Combine everything in a freezer bag, seal, and lay flat to freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 6 to 7 hours or high for 4 to 5, until the chicken shreds easily and the peaches have broken down into the sauce. Serve over rice with steamed green beans or broccoli.

12. Cranberry Dijon Pork Roast

Tart, sweet, a little mustardy, and one of those combinations that shouldn’t work as well as it does.

You’ll need: 1 pork shoulder or loin roast (3-4 lbs), 2 cups fresh or frozen cranberries, 1/3 cup brown sugar, 1 tablespoon dijon mustard, 1 small onion (diced), zest and juice of 1 orange, 1/2 teaspoon cinnamon

Combine everything in a freezer bag, seal around the roast, and lay flat to freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 8 to 9 hours, until it shreds easily. Spoon the cooked-down cranberry sauce over the pork when serving. Good with mashed potatoes or rice and a green vegetable.

13. Sweet and Sour Meatballs

The one that disappears fastest whenever we make a double batch for a potluck.

You’ll need: 1 bag (20 oz) frozen fully-cooked meatballs, 1/2 cup sliced bell peppers, 1/2 cup sliced onion, 1 jar (10 oz) sweet and sour sauce, 1/2 cup pineapple chunks, salt and pepper to taste

Combine everything in a freezer bag, seal, and lay flat to freeze. Thaw overnight in the fridge. Dump into the crockpot and cook on low for 4 to 6 hours or high for 3 to 4, until the peppers are tender and everything’s warmed through. Serve over rice or with toothpicks as an appetizer if you’re bringing it to a gathering.

Tex-Mex flavor with almost none of the chopping, since most of it comes out of a can.

You’ll need: 1.5 lbs boneless chicken thighs, 1 bag frozen corn, 1 can black beans (drained and rinsed), 1 can Rotel, 1/2 cup diced bell pepper, 3/4 cup diced onion, 1 packet taco seasoning, 1 packet ranch seasoning, 4 cups chicken broth (added fresh on cook day)

Combine everything except the broth in a freezer bag, seal, and lay flat to freeze, holding the broth back for cook day. Thaw overnight in the fridge. 15. White Bean, Kale & Lentil Soup

Vegetarian, hearty enough to actually fill everyone up, and the easiest way I know to sneak greens into dinner.

You’ll need: 3 cups chopped kale, 1 can white beans (drained and rinsed), 1 cup red lentils, 1/2 cup diced onion, 1 cup diced carrots, 1 cup diced celery, 2 teaspoons dried basil, 1 teaspoon dried sage, 1 teaspoon garlic (minced), 6 cups vegetable broth (added fresh on cook day)

Tips That Actually Help

  • Brown and fully cool any ground beef or sausage recipe before it goes in the freezer bag. Raw ground meat turns grey and mushy once it’s thawed straight into a crockpot.
  • Lay bags flat to freeze. Once they’re solid they stack like books and take up a fraction of the space a lumpy bag does.
  • Squeeze the air out before sealing. Less air means less freezer burn, and freezer burn wrecks the texture even when the meal’s technically still safe to eat.
  • Write the cook time on the bag, not just the meal name. On a busy morning you won’t want to look it up, you’ll want to read it straight off the bag.
  • Any recipe with dairy, fresh greens, coconut milk, or pasta added “on cook day” needs those ingredients bought fresh and kept out of the freezer bag entirely, freezing them in gives you a mushy, split mess instead of the dish you wanted.
  • Most of these last about 3 months in the freezer, but taste best within 6 to 8 weeks.

The best weeknights aren’t the ones where you cooked something impressive. They’re the ones where dinner just showed up because you did the work three weeks ago on a random Saturday afternoon. That’s the whole point of a freezer stash.
